Easy Cheesy Lasagna with Homemade Ricotta Cheese

I love this lasagna. My favorite part is that you don't have to boil the noodles- score!!

Easy Cheesy Lasagna
  • 1 lb hamburger
  • 1/2 cup onion
  • 1 clove garlic
  • 2 cans spaghetti sauce ( or your own)
  • 3/4 cup water
  • lasagna noodles
  • 3 cups mozzarella cheese
  • Parmesan cheese
  • Homemade ricotta cheese

Brown hamburger, onion, garlic, and then add water to thin out. Place some sauce on bottom of 9x13. Spread thin layer ricotta cheese over uncooked lasagna noodles. Add 1/3 hamburger sauce. Sprinkle 1/3 cheese and a touch of Parmesan. Do this until your pan is fill to the top. Cover with tin foil and cook at 350 degrees until cheese is melted and sauce is bubbling.

Now wasn't that easy!

Freezes well. Make two pans at one time and once again you have two dinners. I like to make one recipe and divide it into 8x8 pans.

Homemade Ricotta
  • 4 cups whole milk
  • 2 cups heavy cream
  • 1 t salt
  • 3 tablespoons white vinegar

Place milk and cream in a large stainless-steal pot. Bring to full boil over medium heat and stir occasionally. Take off heat. Stir in vinegar. Let set one minute. Wet 2 layers of cheese cloth and line sieve place over bowl. Let the liquid drain and your cheese is on top. Add herbs to taste. Place in fridge.

This is really good on toasted crusty bread also. Alix brought it to a party and everyone LOVED it.

-The ricotta cheese is from the wonderful Ina Garten.
